For the Brioche

  • ½ cup almond cheese
  • 8 tbsp coconut oil (vegetable margarine can be used, it depends on the% fat required)
  • 1 ½ cup stevia or sweetener of choice
  • 4 eggs
  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 2 tbsp baking powder
  • ¼ cup coconut or almond milk
  • 1 tsp banana essence (can be replaced with 1 cup banana puree but this increases the number of carbs)
  • 1 tsp cinnamon
  • 1 cup pecans

For the Chocolate Bath

  1. Pre-heat oven 350 ° F or 180 ° C.
  2. Beat cheese, oil, sweetener and milk. Add eggs and the essence.
  3. Mix in another bowl: flour, baking powder, and cinnamon.
  4. Join both mixtures, enveloping and little by little. At the end add the pecans.
  5. Place the mixture in the mold. Bake for 55-65 min. Let cool, unmold.
  6. Melt in a water bath 225 gr. San José 70% cocoa chocolate, add the 2 cups of coconut milk. Bathe the brioche.
  7. We decorate with some caramelized banana slices with a little sugar-free maple syrup and edible flowers, but we leave that part to each creative :)
